~Gluten-free Chocolate Chip Cookies~
1 cup almond meal
2/3 cup coconut flour
1/2 cup psyllium husk
2 Tbsp coconut oil
2 Tbsp cultured buttermilk
2 Tbsp 70% dark chocolate cut into small chunks
1 Tbsp buckwheat grotes
1 Tbsp Natvia stevia sweetener
2 tsp cacao powder
1 tsp baking soda
Pinch of rock salt
Combine almond meal, coco flour, psyllium husk, cacao powder, baking soda and salt. Stir through coco oil and buttermilk until well combined. Add stevia, chocolate chunks and buckwheat grotes. Roll a spoonful of mixture into a ball then flatten into shape. Bake for 20mins 180deg fan-forced oven. Cookies should be crisp on the outside and soft on the inside. Enjoy.
